@Shelley D hope you get answers you need to feel better.
For awhile when I was still eating sugar, I wouldn't buy premade sweets. If I wanted something sweet I made myself cook it, so at least it didn't have a bunch of extra stuff added to it. Cookies you can make a head and freeze the dough in balls spread out on a cookie sheet and then package them after they freeze. Then cook a few and make them in smaller batches. Also you can start cutting down on the sugar in cookies if you wish to. I made sugar cookies with half the sugar and no one every complained.
It took me years to stop eating sugar. I was hypoglycemia way back in 1980. I've had a love/hate relationship with it that long and it's only been about 5 years or less since I stopped.
My favorite food is chopped up 1/2"-3/4“ veggies pieces, tossed in olive oil w/ salt& pepper cooked at 425f for 15-20 minutes.. Winter squash, beets, fennel bulb, are great & carrots(need to be smaller pieces) even apple pieces cooked that way can be sweet if you haven't eaten sugar recently.
Hope the metformin helps. If you go to an endocrinologist they will likely give you a free glucose monitor. I think I'd insist on an A1C test if nothing else. I hated the glucose tests, they had to much junk in them to be safe for some people.
