AM I overthinking this or is there an actual design/pattern for this look?

I know it appears to be a simple color block but its more angled than simply propping the mold. is there a specific name for this design or am I just overtired at this point?

That is pretty cool looking! I would guess that they used a scraper of some kind to get those shapes. If you search "soap scraper" on YT, you will find a lot of videos showing the many ways the technique can be used.
 
I don’t think this was made with scrapers because the layers aren’t consistent in the shape throughout all the bars. I would guess that the layers were either made separately, poured into a mold that is propped up, allowed to set up and lightly sculpted with a spoon (or something). Or each layer was brought to a medium thick trace one at a time and sculpted before bringing the next next layer to medium trace, etc.

Yeah, I'm with @Zing. It reminds me of one of my attempts at angled layers (aka alternating wall pour). If the batter isn't thick enough, your layers will slump and give you that look. (These layers aren't as slumpy as the ones on the original post, but it's the same idea).
