i cant remember the exact cause of this but it has something to do with surface tension and bubbles. its rare, but it can happen.
if you ever microwave water and its not boiling, tap it or stir it before you remove it to make sure its not on the verge of exploding.
it happened to me another time too, but on a much smaller scale, it burst into a boil instead of gas. that one was not dropped.

Off topic, but I'm guessing it was distilled water? I've heard distilled water doesn't boil like "normal" water and only boils when encountering a force (ie. The bang on the counter). You're lucky your hands didn't get burned.
