I use 2 tablespoons of sugar in my batches. No overheating whatsoever, and I soap on the warmer side of things and gel as well.
Honey is awesome in soap. I find it gives me an even bigger payback in bubbles than sugar. I mix my honey in my cooled lye water in order to counteract the overheating issue it tends to cause during saponification. Works like a charm, but it does cause a bit of discoloration in my soaps (light to medium tan). I use 1 tablespoon honey ppo.
