Question On Pails For Larger Batches

So in the past when I made batches of creams, I would simply just make the batches in stainless steel mixing bowl and scoop into jars later. However, I am now thinking of making larger batches maybe 1 or 2 gallon batches. I have been looking online and it seems a good way to do it is by using bucket/pails. Does anyone here use gallons buckets for mixing and storing?

I know you have to be careful not to add the ingredients at too hot of a temperature so I don't melt the buckets. When done with the bucket, do you clean it and reuse or toss it out? I certainly don't want any contamination. I have seen pail liners online, but not sure if really needed. Also, does anyone have a good seller they can recommend? Any suggestions are appreciated :D
 
No, not a dumb question at all!

I don't produce in large quantities, so I honestly don't know from first-hand experience, but my suggestion would be to look for stainless steel pails. You can get really good ones reasonably priced at feed stores or online, or possibly restaurant supply stores. You should be able to find whatever size you are looking for, the are not reactive and easy to clean and sanitize.
