Here's the final product now in the curing rack, and my inspiration....our former herd sire, Mr. Roberts. He was affectionately known on the farm as "Big Rob". He was our first bull, a brindle Scottish Highland. After years of providing 100% coverage of our cows, he developed bad arthritis in his hind quarters and deteriorated quickly last winter to the point of losing about 300lbs of body mass. He normally weighed in at about 2000lbs. It was a sad day when we took him in for slaughter instead of letting him suffer anymore. I am now using his rendered tallow in some of my soaps. Sorry if this is TMI....I'm adamant about being a responsible rancher!
