I bet the longer trace time has to do with the mixer I use, it's a mortar mixer attached to a corded power drill, which I was probably only spinning at 2000rpm. Those stick mixers with single speeds are more like 9500 rpm. That and the 5lbs per batch maybe? I probably stirred it 5 minutes past a light trace, just wanted to be sure I didn't under-mix.
Anyways, I demolded the next day and cut into 2x3 rectangles (very approximate, these were slab pours that I cut by hand with hasty measurements) that are now curing in my spare bedroom but the whole house smells like mint and citrus, it's nice and calming. I had some shavings and scraps left over that I pressed into a little pancake of soap and I already used it, if it gets better with age I'm excited!
I'm already looking forward to stepping up to a loaf mold and a miter box cutter.
