Can anyone confirm if it is necessary to have an amphoteric surfactant in the mix? Does this make it milder? Or am I ok with two or three anionic? I do have some cationic ingredients in my mix as well.

Amphoteric surfactacts add to mildness and help to stabilize foam. Susan Swift recommends a combination of anionic and amphoteric surfactants for regular shampoo. The percentages of each can be adjusted for different products such as bubble bath, shower gel, etc. According to Susan, amphoteric surfactants also rinse off easily. I suggest you consider buying Suan's e-zine Surfactants: a Reference Guide.
