I have Bud Haffner's single wire cutter. It does about the same thing as the cutter in the first post, except a wire does the cutting, not a blade. I've only used it to cut two loaves of soap (28 bars), so not a lot of experience with it, but so far so good. https://www.etsy.com/listing/191983081/adjustable-single-wire-soap-cutter

I also have a homemade blade cutter. I agree that a narrow slot with just enough room for the blade would be best. Sloppy guides are not good, but I also found the blade can also bow in the middle, so the cut is not flat. Very annoying. (I hope I'm making some sense with this description!) I check the cutter for flatness before using it and that helps some. I've used this cutter in the kitchen a lot to do all sorts of jobs. Maybe I just need to put it back in my kitchen drawer and buy a new cutter for my soap. (Hey an excuse to spend more money on my soaping hobby -- what's not to like about that!?!?)
