I think it's pretty good. I use 20% CO and usually aloe as water, or coconut cream or something ( never just water with no additives). It's not big bubbles, but it's more of a creamy lather with the high stearic.
The 'white speckles' in this case, are actually glycerin rivers. I often get them when using TD and gelling my soap.

Yes - don't use the default. Change it to Lye concentration - 33% That's a good starting point. When you said you made 50/50 lye and then made up the difference wiht honey, it also sounds like you may have used an awful lot of honey? I've never used it myself but from what I've read here...
I use an FO called Ocean Breeze and it smells just so! I've had a quick look on the American suppliers' websites but have not found where it's from sorry. Maybe it's made in Australia?
Do you mean essential oils or fragrance oils? The one you have described sounds like an FO because coconut is not available as an essential oil to the best of my knowledge. There are a number of FOs that contain essential oils however. If it comes in a 10ml bottle my guess it's not intended...
Do you think it smells like ammonia? I sometimes get that smell if my soap gels - particularly if I use coconut milk in the recipe. It goes away after a week or so of curing.

3) Most people use other things these days - ROE in the oils is quite common
4) Soap do what soap do - if yours doesn't gel, then so be it. It can depend on many factors.

Blood orange FO is a good alternative to EO, it sticks way better. (I get mine from Candle Science)
Rosemary EO is very strong and sticks.
