Why use distilled water?

I went looking on Amazon & noticed this beautiful piece of equipment! Seems to get high ratings & comments from people as well.

It doesn't plug in. It can be used on a stovetop, or even on top of a wood stove, outdoor fire or BBQ I imagine. You can make not only distilled water with it, but also hydrosols, small amounts of essential oils etc.

If I get a distiller at any point, it will likely be one like this. Would love to do some distillations of the many wild plants I pick!
 
Here is the distiller I bought. I use it constantly and love it! Amazon says it's not available right now, but there are many similar ones that are.
