Why dough breaked?

I use of a recipe with Coconut, Olive, Sesame and castor Oil. I add NaOH to it and start to mixed with a spoon. After 20 min Dough suddenly start to break and vent oil. scum is similar Mashed potatoes float in oil.
Is it normal? I must drain it? or it's damaged?:-?

9.651 Ounces of Water
3.579 Ounces of NaOH
7.055 Ounces of Coconut Oil
14.11 Ounces of Olive Oil
0.705 Ounces of Castor Oil
3.527 Ounces of Sesame Oil
0.013 Ounces of Rose fragrance
My process was cold. About temperature when liquids mixed was 35 C.
 
It sounds like it's ricing. You need tu use a stick blender to bring it together, just stirring with a spoon will not help. You may need to throw it on some heat or in a crockpot. As effy said more info might help as well as a picture.

When you say the dough broke, could you have stirred it through trace? Was it thick? What you are describing the separating almost sounds like gel stage where the whole mixture gets hot and relaxes. It is usually already in the mold by then so the separation doesn't "show". If it was not thick like a pudding before this happened then I agree with ricing.
 
Did you first dissolve the lye in water? Or did you stir dry lye into oils?

I'm sorry but that is the impression I have from your question, so I just want to be clear. You MUST dissolve the lye completely in liquid before adding it to oils.

Sounds like that played silly-buggers with it, OP smooshed it in the moulds and here we are.

Mooney - certain fragrance oils (especially floral scents) are known to cause issues with the soaping process. As you are trying to work out what is actually happening in soaping generally, I would either go for a nice easy essential oil like Lavender or leave out the scent altogether for now. I have done many unscented batches when looking at a recipe rather than "wasting" an EO on a batch that I might not do much with.
 
This amount are converted from gram t Ounce! :
200 Grams of Coconut Oil
400 Grams of Olive Oil
20 Grams of Castor Oil
100 Grams of Sesame Oil
I Convert because I think it's simpler for masters!
I think I have not soap or I have a bad soap!
It's second time that I make soap! in the first time I make a good face but very high lye soap.
I don't know what is ricing but I know about receipts !
First I dissolved lye in water and stop work until degree come down to 35. oil was 35 degree too so I mixed it and start to Agitation! At first it was normal like first time! but suddenly ...!!!
At first oil and lye mixed very well together but now I have some fatty soap? or something floated in oil!
 
I agree with [The Efficacious Gentleman] :-D. I think breaking started when I added Rose Essence to liquid!
Now I lose my soaps?
I make another test tonight! I hope that be really soap! But I don't know what I must do with bad smell of my soaps!:-D
 
Soap should not have a bad smell unless you start with ingredients that already have a bad smell. If your ingredients have a bad smell, that will stay in the soap you make. Sometimes the bad smell can be removed, but that is not a problem for beginner soapmakers. It is better to learn soapmaking using oils that smell good.

Do you smell a rancid odor for any of your fats? If any oil is rancid, the oil must be cleaned to reduce the odor before making soap.

Is your coconut oil a refined oil or is it a raw oil? The raw oil may have a very strong smell.

Is the sesame oil roasted or plain? Roasted sesame has a very strong smell that cannot be removed. Plain sesame is not as smelly.

my soap have a bad smell that I thinked is from NaOH!!! All my oil are balmy but when I mix them with lye , I have a rancid meet smell !
Soaps without any fragrances aren't bad smell?
 
what TEG said about floral fragrances. they can be very tricky (ricing, instant trace). just maybe, it happened like Susie said, improper emulsification + funky FO = hot mess.
 
No you do not have to lose your soap. If you have a crock pot or double boiler (Bane Marie) dump all the mess including all leaking oils in the pot, stick blend it back together it you can. (if you have poured off and discarded any of the leaking oils you will not be able to do this method). If it continues to stay seperated turn on low heat and start to cook stirring until you can get it to come together then cook for 20 min or so and check for zap. As far as bad smell as DeeAnna mentioned are you using old oil?

As far as a rancid meat smell that I would wonder about since you apparently used no tallow or lard. Some people smell scents differently and maybe it is just the raw soap smell or you are picking up some scent from the sesame. I will mention with the tiny amount of rose fo you added in it is a very difficult fo to use. If you decide to try hot processing it I would add in at least another 0.7oz of fo to the batch after it has cooked. Usually fo's are used at a rate 5-6% per weight of oils. Some will be less such as clove, and cinnamon
