soooo---- which oils have a short shelf life?

Just off the top of my head, the oils that usually have short shelf lives are:
Cottonseed
Sweet Almond
Borage
Flaxseed
Safflower
Hemp
Peanut
Grapeseed

If you check out From Nature With Love, they have a nifty chart that has the normal shelf life of oils:

scroll down to the middle of the page & you'll find oils.

I just found a salt bar in the back of the closet that was the 2nd batch of soap I made - 3 yrs ago in Nov. I used it today and it was better than it was when new. No DOS, no rancidity of any kind. I had not added any scent, so that was not a question. It was 80% coconut, 15% avocado and 5% castor oil. Sea salt at 100% of oils. I really hadn't thought much of it when new, but must say, 3 yrs later I'm thinking I like it. Maybe there some things besides wine that get better with age.
