To Gel or Not to Gel

I have seen many posts where some people say that they don't let thier soap gel and others to say that they do. What exactly is if the difference between the two. My soap always gels and I thought that is what it is supposed to do but now you all have me wondering and how do you not let it gel if that be the case?
