I make soap as a hobby and I'm not big on too many online orders. However, I found that I save the most money buying 8 lbs NaOH from essential depot. Would that amount of NaOH be overkill or will the lye hold up for the next how many months?

No, its not over kill and it will last as long as you keep it well sealed. You'll be surprised how fast you can go through that much.

Yes, it is easy to store. I get mine from ED and store it in my favorite Christmas popcorn can. It's a perfect fit.
