In the summertime when overloaded with zucchini I grate lots and lots in the food processor, put 1 cup in sandwich baggies and put these baggies in a large ziploc bag for the freezer. Anytime I make soup through the year at least one baggie goes into it. It's flavorless so it fits in with anything and you have pretty little green specks in your soup.

Example of yesterday's soup:

chicken stock and meat
2 c. home frozen corn
fine soup noodles
1 baggie of zucchini thrown in after noodles are cooked

I like a brothy soup. Make it as thick or thin as you like it.
 
I found a cute little cucumber recipe book at a yard sale for 10 cents. Aside from the normal cold summer recipes their were Stuffed Baked Cukes, Casseroles, Au Gratin and Scalloped. I had never thought of using my surplus cucumbers in much more than soup or breads. Was similar to using zucchinis in experimental ways.
 
Whenever I used ground beef or turkey, I had 2-3 medium zucchini. It really improves the texture and moistness of meatloaf. The meatballs are good tasting and nice texture for eating, but aren't quite as sturdy. Which is fine with me b/c I break them up anyway.

For my cream of z soup I use chicken broth and a potato for creaminess instead of rice, with crumbled bacon and seasonings.
 
I made canapés for a gathering using cucumber slices, pressed and slightly hollowed out, with crepe cheese w/dill on top, with a roll of smoked salmon on top. Delicious! Fast to make!

Cream cheese!

I've been seeing a glut of Zucchini from my garden as well.
I recently found a zucchini bread recipe that uses extra zucchini and really like it.

So most of my freezer bags of shredded Zucchini is in 5 cup portions just for this recipe.

I'm also spiralizing lots of it and sauteing it or freezing it.
I ended up buying the spiralizer for my kitchen aid mixer though I let many of them get too big around to fit.lol
It's also good grilled. Slice, drizzle with evoo, sprinkle with salt and pepper, then grill until tender.

So where's the recipe?? All I got from the video as far as amounts was 5 c. zucchini and 6 eggs.
I just used the one she put in the video description.
She does mention in the video that she put the complete recipe in the description section below the video.
Maybe you just missed that?

I missed which forum this is thread in and read “soap” everywhere you wrote “soup” :)
For what it’s worth, I grate my zucchini and then squeeze out a lot of the liquid before I freeze it. It makes good zucchini bread in the middle of the winter when we’re past zucchini fatigue.

It depends on what is used to view YouTube videos. If using a browser they are usually visible, but some apps just show the video without the description and comments. I have viewed videos both ways, but I like to see the descriptions and comments, so don't like using the YouTube app.

Hmmm.... I was unaware of that.
I'm using the YouTube app on my phone and it shows up there so I assumed it would show up for everybody.
 
Now if my neighbor came down the street carrying loaves of zucchini bread... that's a different story! :D
You're a long ways from me but if you were my neighbor I would definitely give you some zucchini bread.
Most of the time I make it with chopped walnuts added because that's how I like my sweetbreads.
But I am going to have to make some for my one friends kids that does not have nuts due to nut allergies.
