I agree with Tanya. Saponification is going to continue until the limiting factor (lye) is consumed, and the vast majority of this happens in the mold. Gel is a visible expression of the reinforcing effect of the heat generated by the chemical reaction on the rate of the reaction itself. More heat, faster reaction... faster reaction, more heat, etc. Sap in an ungelled soap still reacts to completion, just slower and lower temp. I can see how the higher temp of gel might affect some of the unsaponifiables, but I don't think you're going to get a significant diff in which oils are sap'd by when you add them (in CP). No offense to anybody, I realize I am pretty new to soapmaking, but chemistry is what I do for a living.
