I agree with lsg, we live in a pretty dry part of Canada and empty our 6 gallon dehumidifier bucket every day or second day..
 
I've been debating doing the same thing but our basement is really damp. Right now I have my soap curing in the garage but it gets really warm in there.
 
Our 200+ year old house has a "keeping room"...a narrow uninsulated room that runs along the back of the house. That's where I've cured my soaps for the past 3 years with no ill effects.
BTW, I live in the deep south with 100+ temps and ridiculous humidity!

have you every used the water as your distilled water, heard people have is it the same?
