Hydrosol stinks

It doesn't sink, But it had a green/earthy and rubbery smell to it.

It doesn't matter what I use.
Lemon balm, pineapple sage, mint; stems and leaves, just leaves; spring, summer, or fall
It all comes out smelling the same.


I'm using a big pot with a double boiler a dish sitting in the double boiler with a knobbed lid turned upside down for the drip
Bring to simmer and simmer for around 20 minutes


What am I doing wrong?
 
Same here! I tried making lilac hydrosol using that method and it came out having kind of a green, starchy smell to it, same with rose hydrosol. The best way I can describe is by comparing it to... raw potatoes, maybe?

Yes, I'm use the same method. My rose hydro was a dark brown and smelled like decayed rose petals. I'm hoping to try again this summer but I'm going to use wild roses instead and cook them at a lower temp.
