OK this is a rookie mistake - can't believe I just did this!! So being completely distracted I ended up adding in an extra pound of water into my 8 pound batch. The recipe calls for 3 pounds of water - NOT 4!

I did manage to get it to trace - slowly but surely.

Is there damage that's been done or am I simply looking at an exceptionally long cure time?

I haven't done that, but I have rebatched with too much water. The soap is fine, but it doesn't look great. It's kind of warped and the texture looks a little off.

if you got trace finally, then you shouldn't worry about your soap. You just need more time to let your soap hardened before using.

As what other have said, no damage to your soap. Not to worry. Just that it may take you a longer time to cure the soap in order for the extra water to evaporate off. But do take note, the soap may be too soft to be remove from the mold the very next day. hope that it won't happen to you.
