Fizzy Powder

Hi,
I have been making fizzy powders with bicarbonate, citric acid and cornflour (2:1:1) for many months with no issue. Suddenly every batch is turning rock hard instead of staying in powder firm. I’ve replaced ingredients with new bags thinking moisture was the issue but it’s still happening. Any clue what’s going on?

The only reason I know of is moisture. I'm also in CA, and we've had 80% humidity lately. Have you tried using desiccants in your fizzy powder? Moisture has a way of seeping in though almost any container.

Just grind it up if it turns hard.
