i've not had any issues when using sodium lactate, what was your usage rate? the smell can definitely change during the curing process, hopefully in a few weeks it'll smell delicious :) it almost looks like it developed a skin on the top and then the mold was disturbed and the batter underneath...

This is an unscented uncolored batch- I cut it and put it in a zip top bag so it wouldn’t dry out before I rebatched it Did I wait too long and it’s growing mold? It went through partial gel, and the only place I’m seeing these markings are the gelled areas
