Using infused Olive oil in soap

I want to use this infused Olive oil for a batch of soap. Will I calculate it as if I'm just using normal Olive oil?

Yes. Worst overestimation of SAP is 2% (two “<1%” ingredients), so as long as you put 2% or more superfat into the soap calculator, you're fine. Or rather the natural variation of SAP values are at least as large as the (unknown) amount of ginger and lemongrass in this oil.

Report back if anything of the scent survived the lye armageddon!

I thought I'd use lemon and ginger essential oils as well. We'll see what happens.

If the lemongrass and ginger oils are Essential Oils (& I suspect they are), then the LESS THAN 1% each don't affect the SAP value at all.
