I remember my first turkey...I was really disappointed not to find the giblets and neck inside and had to make my stuffing without them. It wasn't until then hubby went to carve the turkey that I discovered that they were actually in the neck cavity, not the body...like with chickens. ALWAYS check the neck cavity.

I rinse my bird, pat it dry, season the inside with a bit of salt. Then I massage the entire outside with olive oil and paprika, tuck in the wings and set it in a slightly oversized and raised pan. Stuff it, truss it and make a tent with foil and put it to bed in the oven. We usually do about a 15 to 20lb bird so I give it a couple of hours and then start basting it about every 30 minutes and then uncover it the last 30 minutes.

I'm about to attempt gravy with the neck and giblets as soon as my better half gets done with the kitchen. I'm ashamed to say I've never tried it before, we'll see how it goes.
 
We took my son to a Casino all--you-can-eat Buffet after Hubby got off work. No cooking, no mess, no cleanup, no leftovers, no standing on my feet for hours 3 or 4 days in a row to make food, most of which I don't eat.

I do sort of miss my special treats, but I did make one of my special holiday side dishes a few days earlier and it was wonderful having it on a normal day.
 
@TheGecko Oh goodness I don't remember cooking my first turkey' to many years ago' I guess. lol They are so easy to bake.
@Johnez how did your gravey turn out?.
@earlene that sounds like a perfect way to go, I'd miss the deserts after too. thats when you pick something up for latter w/ a hot coffee or tea.

I get a turkey breast for me and the kids, rub it down with olive oil and a poultry rub, put it in the crock pot with some seasoned potatoes and veggies and put it on low for the night. Perfect turkey breast every time. I even learned to make homemade gravy this year. I was pretty impressed with myself.
