I have the new soapmaker 3, and had the 2.1 or whatever it was before that. I have played around with it, but haven't got serious with it yet.

Just a question about the graph if anyone knows.

Does the fluffy lather refer to the bubbliness of the soap, and the stable lather refer to the creaminess?
 
yes fluffy is big bubbles (think coconut oil), stable is the creamier, denser lather (think cocoa butter)

would shea butter give the creamy lather too?
 
Just about any butter, lard, and hydrogenated material (crisco, soy shortening) will give you a creamier lather. Palm oil contributes to creaminess as well.
