I looked at two different saponification charts and they both had different readings. One said that sweet almond oil had a sap value of 180-200 and the other chart said it had a sap value of 135. How do I know which is correct? I already use a lye calculator but I was wondering if anyone knew why these charts were different.

135 is sweet almond butter

the higher value is for the sweet almond oil.

Find a calculator you trust. I like soapcalc, along with just about everybody on this forum.

Were you looking at the same chemical? On soap calc Sweet Almond Oil was:

NAOH SAP: 139
KOH SAP: 195

Right - make sure you are looking at the SAP for the correct caustic.
