I just made a new batch of soap today. However, I want to put it in the freezer to prevent gel phase. How long is one supposed to leave it in there for? Also, do you cover it up with a towel after it comes out of the freezer, or just leave it uncovered?
 
I would leave it for 24 hours. Covered or covered is up to you, depending on your freezer set up. Mine has a section that is just heigh enough for my two moulds so the top is essentially covered.

Bear in mind, it'll take longer to saponify as you are slowing the reaction down
 
I have noticed that if I do put my soap in the freezer it's sofer and takes a few extra days to cut. Is that normal?
 
I used titanium dioxide for the first time in this batch, but when I did cut the soap I had little undissolved pockets of colorant. Would that affect the final look of the soap once it cures? Here are the soaps I'm referring to:

I've had this happen, too, when trying mica oil swirls on top. Is it the mica that is pocketing? Hard to tell from your pics, actually the soaps look really pretty. I have noticed that it seems to happen more when using a TD that I just bought and really like otherwise, super dissolvable and makes the soap v. white when added. I wondered if it was the TD or something else as well.

I usually try to do the swirls in a bit of oil from the batch but sometimes forget so add do it w/a tad bit of extra oil, thinking it will evaporate eventually. But the pockmarks are not good.
 
The mica on top did not dry well, and is coming off, but I didn't expect an awesome outcome from my first attempt. Here's a closer look:
