I found this 3 piece miniature plane set at Harbor ($10.99) Freight and was wondering if anyone thinks they might work in lieu of the $40 - $100 "soap planers" for sale on ebay and other sites?

I think I'm going to order them and see. If they don't work for soap, I'm sure that I can find something to use them for and the price is beyond reasonable.

Are you just looking to do corners?
The widest looks like it can't be more than .75" wide.
 
Pretty much only looking to outline the soap ("beveling"?) on occassion and looking for the proper tool to do that type of work. My woodworking skills are nil, so if these won't work, any recommendation will be much appreciated.

Also, in the description of this set I found on ebay, they say that they are 3" wide (they are also selling the set for $29.99

I use a planer to bevel, I hold it upside down and run my bars at an angle to bevel the edges.
 
I read it that those are 3" long front to back, but I think they would still work to bevel corners and do hand crafty things to your soap. Probably just not any good for the broad sides which is what the soap planes will give you.

I too sometimes gram one of my planes to bevel the corners.
