I have some parsley powder colored soap and they are yellowed...definitely not green. I'm sorry it turned so dark on you though!
 
I have had some luck with the parsley powder from wsp, some soap that is months old and still green. It usually does lighten up some though and in the batches I didn't put enough in it has lightened to a yellow green.
 
I used some of the WSP lavender EO I got for my pine tar soap (that seems like it will never happen, the store staff can't seem to order it right). I only used .4oz for a whole 26oz batch and I don't like it, but I forgot how much I don't like lavender!

My last gardener soap I did CP and used parsley flake (same stuff I ground for this batch) and those little bits are still greenish 2 weeks later. I did HP so I could test out new oils sooner, if the soap does it's job, I'll make another CP batch and leave the parsley whole like last time.
