thank you for your answer and YES it helped alot! It's possible to buy duck in a tin here which I was considering trying also... I know when I put the fat in the fridge it separates and I thought the fat on top would be usable but now I think I'll use your method for the beef. Thanks!
And Jax, I've been using saindoux . Someone gave me some palm fat which is lovely in the soaps also. Tried olive, palm and sunflower with tea tree and it takes longer to harden up to cut. But they're looking great!...so far
