Hi all - I made a yummmmmm-y batch of our favorite copycat Minestrone Soup today for a little hole in the wall place in town. It is yummy as is, and sometimes I’ll add some small bits of stew meat/chuck roast. The answer on the “secret” V-8 amount is 8 oz. Sprinkle some Parmesan cheese on top and serve with some warm fresh bread, preferably a loaf with sesame seeds on it.
