My shop is not temperature controlled, I live in Southeast Texas, so it gets VERY hot and humid in the summer, and pretty chilly during the "winter" Which of these do you guys think will be more of a problem? Do you think that putting a fan in my curing area will help? What about an electric fan type heater for cooler weather? My shop is in a ceramics studio, so I can make a humidity control type storage area, but temperatures arent that easy to control. Thoughts?
 
how chilly is "pretty chilly"? But I think the heat and humidity during the cure are going to be your problem as they promote rancidity/DOS.
