How about lotion? I've been thinking about giving it a try using a basic recipe. It uses a lot of the same ingredients as soap, so you'll probably have a lot of the ingredients already. Bonus, no waiting for lotion to cure like CP soap! LOL
It also works well in body butter or to use for oil pulling. A little rubbed into the ends of your hair makes it shiny and soft or you can use it straight on your skin.
I had to use up 20kg within year and a half. I only make soap for family so that's a lot CO to use up.
I used it for deep frying and roasting, it makes roast potatoes really fluffy
Even thought I live in Fl my skin gets so dry I use straight coconut oil on my legs and arms. It absorbs quickly and non greasy. So this might be another use for your leftovers and no time involved .
Also great for frying chicken in.
