Coconut Meringue Pie

Approximate measurements, definitely a creamy coconut flavor without being too strong. Next time I think I will go mile high with the Meringue.

Ha... I'm on a diet also! Taking it to celebrate Valentines this weekend and hope I don't eat any... Yeah....we'll see how that plays out.

Yum yum yum!!! I'm drooling all over my phone screen...love the slight toasty color! Gives the white a very good contrast!

OMG that looks fantastic! I love coconut custard, so you must eat a piece for me. If you eat it for me, it doesn't count towards your diet...really. :wink:
