Today I made one of the Failor recipes and adhered to the total cook time rather than using the zap test as my indication of completion.
Prior to this, I made two batches from her recipes and when I got to glistening mashed potatoes plus no zap, I stopped the cook - in both cases under 45 minutes. Both of these batches failed. In this case, what I mean by fail is that after 24+ hours of resting, both batches transitioned out of the paste mode, and into a thick liquid mode (sort of like a really thick shampoo).
Can I re-heat this thick liquid and essentially complete the cook time? Or should I just experiment, and see what can be made from this liquid? (Wouldn't it be cool if I just invented a whole OTHER class of soap!? LOL)
