As promised here's the recipe for the best sandwich/grilled cheese/french toast bread ever! Gotta give credit to the source, the recipe can be found in the 'Artisan Bread in Five Minutes a Day' cookbook.
Recipe makes three 1.5lb loaves
2 cups lukewarm water
1 cup buttermilk
1.5 Tbsp granulated yeast (2 packets)
1.5 Tbsp kosher salt
1.5 Tbsp sugar
6.5 cups unbleached all-purpose flour
butter or neutral-tasting oil for greasing the pan
1) Mix yeast, salt, sugar with the lukewarm water & buttermilk
2) Add flour and mix with wooden spoon until flour is incorporated (can also use a mixer w/dough hook but isn't necessary, that's the beauty of this recipe).
3) Cover and allow to rest for approx 2 hrs
4) Knead dough adding flour if necessary, divide and form into loaves
5) Put dough into greased loaf pans, cover and let rise 40 mins. About 20 mins into final rise preheat oven to 350 degrees.
6) Slash tops of loaves with sharp knife if desired, bake for 10 mins then brush with melted butter and bake 20 more mins or until golden brown
