Try making your regular soap in two batches, first with your local inexpensive olive oil, another with a certified Virgin Olive Oil. My bet is that the cheap olive oil is adulterated with cheaper oils. The bars will feel different on the skin.
Just my opinion,

Here is an article on DOS by Kevin M.Dunn,
author of the book "Scientific Soapmaking".

In general - for thos who sell - some tips:

There are two probable problems, you'd want to avoid:
DOS in your soaps at your place, and - more important - soaps at your customers'.
(You don't know whether they'll use the soap immediately after buying, or if they are
storing them for later use.)
When the soaps get spoilt the finger is aimed at you.

- buy premium oils from a trusted supplier (adulteration of oils unfortunately happens)
- watch the shelf life
- use fresh oils
- avoid or lower the amount of those oils that are more prone to DOS
- use additives as suggested by Kevin Dunn
- store the soaps in a cool and well ventilated area
- label adequately and include "best before" date.
