It's how much salt you use, 4% salt won't effect the lather much, but 50% would need a large amount of coconut oil to keeps it's bubbles.
This worked for me. 50% Coconut, 25% Palm/lard, 25% Olive, 25% Salt, a "lite Salt Bar"

Try making your regular soap in two batches, first with your local inexpensive olive oil, another with a certified Virgin Olive Oil. My bet is that the cheap olive oil is adulterated with cheaper oils. The bars will feel different on the skin.

Yes, ignore INS, I find "hardness" and "INS" to be of little use.
Your castor is a little high, usual addition is 5%, more and the bar gets sticky.
Just increase your Olive to 42%.
You can add about 4% Sea Salt at trace.
